Welcome to Chapter 1

I stumbled across Inda on a face group called a 90 day low carb challenge. She posted these pictures that showed such a huge difference between the way she used to be and the way she is now. It totally inspired me right off the bat.

I think People be stunned when they hear the entire story and the numbers, I mean wow. Now you might think that it was like a straight line journey for India. India sorry about that but it really was in her journey is very fascinating with many winding turns. So take a few Minutes to listen to this podcast of my interview with Inda Spearman Lattimore.

Have I told you about Kerry Gold butter. “I mean, Bu, Bu, Butter!” Well of course not. This is chapter one. No they are not a sponsor of this show. But, Butter,  it is essential to a low carb high fat diet. When I first looked at Kerry Gold butter I saw the price and I was like butter is butter. There is no way I’m paying that kind of money for some butter. But I keep hearing people talk about it, people like Jimmy Moore talking about it on living la vida Low-Carb. I think for episode 50 to 500, I mean, I think every episode he mentioned Kerry Gold butter at least once or twice but you know when I first open that package I could tell it from the texture and color of Kerry Gold butter versus my regular butter, I knew I had something special

Cooking with Gold

Sauteing  some vegetables in a pan, and at the end, I topped it off with some Kerry Gold and it really was gold and change the entire dish. Now of course I’m not telling you to cook go Kerry Gold it’s pretty expensive to be cooking with.  I think that would be like you know using a New York strip steak for stew. Probably not the best use of a steak right. If you put it on anything at the end, it will do wonders to take that flavor to the next level. Plus it is a quick way to add fat to any meal. So the next time you’re in that dairy section you know to look for that green in yellow pack carry go butter right throw it on your meal and you’ll be I think you’ll you’ll be pleasantly surprised.

One of the toughest things about living “A Low-Carb Life” is feeling like you are going it alone. in 2003 I felt that way, it was when I started doing Atkins. I felt as if I was on an Island. I felt like no one understood what I was going through. People treated me different. People would often tempt me with foods they knew I was trying not to eat. There was literally no one I could talk to for support. The only resource I had was this book, the Atkins diet. I lost 50 pounds, got within shooting distance of my goal, and then fell off because it felt so foreign to what everyone else was doing. Find a dietary plan not just a diet

There is a big difference between a dietary plan and a diet, in my mind. A dietary plan is an all-encompassing way of eating which is a long-term change that will fundamentally transform the way you eat for the rest of your life. Your dietary plan should include short-term and long-term boundaries. A diet is a short-term way of eating to hit a goal.  Most people are looking for a diet they can get on to lose weight. The one thing that I have learned is, there is no quick fix to weight loss and getting healthy. Most people spend their whole lives doing diets. Meet LaTonya Owens,

August 1st marked a new day for LaTonya when she decided to start living a low-carb life. Just like most people, she knows the rough outlines of what “low-carb’ is, but has been skeptical about it. Today I sat down to talk to LaTonya. It was a very interesting conversation. I can’t say that LaTonya is a stranger, matter of fact, I consider her a friend. We sit next to each other at my day job. LaTonya has had a front row seat to the changes I have made this year. If you want to be successful doing low-carb you have to read the labels.

Reading labels is the key

When I first started Atkins in 2003, I was lost. This was when I was working in Connersville Indiana. I remember that the head of security, Sgt. James Burton, had lost a considerable amount of weight in a short time. It seemed like everyone was talking about it. Some people even had commented that he was sick and losing weight too fast. It was around that same time I hurt my back and it seemed to never heal. My doctor made an off the cuff remark about all the extra weight will probably make it harder for my back to fully recover.

The next day as I was leaning against a column at work using it to help me stand upright, that is when Burton happen to walk by. I asked him how he lost his weight so fast and he told me about cutting out bread, pasta and eating only meat, nuts and cheese. That day I started. I remember buying cold cuts on the way home and eating them instead of stopping for my usual snack at the gas station. Later I found out that it was the Atkins diet. I bought the book, read it cover to cover, lost the weight, and my back stopped hurting. I started May 15th  and by Labor Day had lost 50 lbs.

Recently, I tried my hand at a recipe that looking promising off of Ruled I wanted to try the Ham and Cheese Stromboli recipe because it look delicious and could easily be packed up and taken to work for lunch.

I have to tell you, looking at the pictures on the site, I thought there was no way that my result would be anywhere close to the same, but I was pleasantly surprised when I made it because it was delicious!! Please see my results
