Welcome to Chapter 1

I stumbled across Inda on a face group called a 90 day low carb challenge. She posted these pictures that showed such a huge difference between the way she used to be and the way she is now. It totally inspired me right off the bat.

I think People be stunned when they hear the entire story and the numbers, I mean wow. Now you might think that it was like a straight line journey for India. India sorry about that but it really was in her journey is very fascinating with many winding turns. So take a few Minutes to listen to this podcast of my interview with Inda Spearman Lattimore.

Have I told you about Kerry Gold butter. “I mean, Bu, Bu, Butter!” Well of course not. This is chapter one. No they are not a sponsor of this show. But, Butter,  it is essential to a low carb high fat diet. When I first looked at Kerry Gold butter I saw the price and I was like butter is butter. There is no way I’m paying that kind of money for some butter. But I keep hearing people talk about it, people like Jimmy Moore talking about it on living la vida Low-Carb. I think for episode 50 to 500, I mean, I think every episode he mentioned Kerry Gold butter at least once or twice but you know when I first open that package I could tell it from the texture and color of Kerry Gold butter versus my regular butter, I knew I had something special

Cooking with Gold

Sauteing  some vegetables in a pan, and at the end, I topped it off with some Kerry Gold and it really was gold and change the entire dish. Now of course I’m not telling you to cook go Kerry Gold it’s pretty expensive to be cooking with.  I think that would be like you know using a New York strip steak for stew. Probably not the best use of a steak right. If you put it on anything at the end, it will do wonders to take that flavor to the next level. Plus it is a quick way to add fat to any meal. So the next time you’re in that dairy section you know to look for that green in yellow pack carry go butter right throw it on your meal and you’ll be I think you’ll you’ll be pleasantly surprised.

Find a dietary plan not just a diet

There is a big difference between a dietary plan and a diet, in my mind. A dietary plan is an all-encompassing way of eating which is a long-term change that will fundamentally transform the way you eat for the rest of your life. Your dietary plan should include short-term and long-term boundaries. A diet is a short-term way of eating to hit a goal.  Most people are looking for a diet they can get on to lose weight. The one thing that I have learned is, there is no quick fix to weight loss and getting healthy. Most people spend their whole lives doing diets. Obviously, they are not successful, because if the last diet was successful, they would not need the new one. more “Find a dietary plan not just a diet”

If you want to be successful doing low-carb you have to read the labels.

Reading labels is the key

When I first started Atkins in 2003, I was lost. This was when I was working in Connersville Indiana. I remember that the head of security, Sgt. James Burton, had lost a considerable amount of weight in a short time. It seemed like everyone was talking about it. Some people even had commented that he was sick and losing weight too fast. It was around that same time I hurt my back and it seemed to never heal. My doctor made an off the cuff remark about all the extra weight will probably make it harder for my back to fully recover.

The next day as I was leaning against a column at work using it to help me stand upright, that is when Burton happen to walk by. I asked him how he lost his weight so fast and he told me about cutting out bread, pasta and eating only meat, nuts and cheese. That day I started. I remember buying cold cuts on the way home and eating them instead of stopping for my usual snack at the gas station. Later I found out that it was the Atkins diet. I bought the book, read it cover to cover, lost the weight, and my back stopped hurting. I started May 15th  and by Labor Day had lost 50 lbs.

Ketosis Brought Me From Carb Addiction To Freedom- You can do it too!



  •         2 eggs
  •         2 slices of bacon
  •         1/4 spinach
  •         1/4 cup of mushrooms
  •         Olive Oil (I would have used butter, but this was from the work cafeteria)

The definition of addiction is “the state of being enslaved to a habit or practice or to something that is psychologically or physically habit-forming, such as narcotics according to That was life 8 weeks ago. My drug of choice was not a narcotic or alcohol.  My vice was food. Chewy, gooey, salty or sweet, a delicate treat or lots of carb with little meat. Food has been was my drug of choice for all of my adult years. Cloud bread is a great low-carb alternative to traditional bread.

One of the many things that most people worry about changing to a low-carb lifestyle is giving up bread. We have become a sandwich nation. Taco Bell ran a campaign for years saying think outside the bun, that was a clever way of saying everything else you eat at fast food restaurants has a bun on it, try something different. Well this bread recipe is gluten-free and carb free. It has 3 main ingredients and everything else is just flavoring. It is great for making sandwiches, in this photo, I have made sausage, egg, cheese cloud sandwich.

My first Bone Broth Brew made in a Crock Pot

Bone Broth

After 48 hours of waiting my bone broth was complete. Given I have never tasted someone else’s bone broth I am really wonder if this is what it is supposed to be. Well I know I did a few things wrong at the start of this process so that could have something to do with how it turned out. A time to remember

Remember the time.

Standing at the stove as the sun light started to peek through the window shades this morning felt natural. I could remember the time my great-grandmother was standing at the stove in her kitchen in Tennessee. It was an ancient stove to today’s standards. It still used wood for fuel. But she treated it like it was most important thing in the house. I miss those summer days  being a little kid looking up to this, fish catching, shotgun shooting, pig slaughtering, snuff chewing, blue-eyed, dark-skinned woman named Joe. She talked with that Tennessee draw that always makes you feel at home. Every morning she was up before the sun getting breakfast for the family. more “A time to remember”

Where do I Start?

People are always asking for a few tips they ask “what do you eat?” most of the time they ask this because they want tips on how to do a Low-Carb diet. Let me say first we are not doctors and we are not trying to give anyone medical advice. Now with that disclaimer out-of-the-way, there is nothing wrong with sharing what meals we eat and why we eat them. We are only going to share a few tips or what we believe worked for us.
